Cooking-oil fires need a different kind of protection
Commercial kitchens combine open flames, very hot cooking oil and grease-laden exhaust ducts. A fryer fire can spread into the hood and duct within seconds, and water makes an oil fire dramatically worse. A kitchen hood suppression system detects the fire automatically, shuts off the gas or power to the cooking appliances and discharges a wet chemical agent over the appliances, into the hood plenum and into the duct.
The wet chemical reacts with hot cooking oil to form a soap-like layer that smothers the fire and helps prevent re-ignition. FIRENET designs systems around your cooking line — appliance types and positions, hood length and duct layout — using listed systems designed for commercial kitchens (commonly tested to UL 300), and services them so they are ready when needed.
